This is an ancient Roman grape variety that was revived by Cincinnato to continue the legacy of ancient Lazio. The wine is vinified with destemmed grapes with a soft pressing and 12 month aging in stainless steel. An incredibly delicate wine with elegant complexity that will tackle the strongest flavors of any dish. We're talking Jollof rice with cubed goat, steak with chimichurri, or spicy sausage and broccoli
